FORDO'S STEAK SANDWICH:
4 x steaks, trimmed (Dobbo)
Olive oil for brushing
Loaf of sourdough bread, sliced and char-grilled
Whole piece of Garlic to rub on the bread
40g baby rocket (arugula) leaves
Mustard Aioli dressing
Squeeze fresh lime
1 Tablespoon Dijon mustard
Sea salt and cracked black pepper
BEETROOT CHIPS TO SERVE
METHOD: To make the dressing, Mix Aioli, Mustard and Lime together - mix well to combine. Set aside.
Heat a non-stick frying pan over high heat. Brush the steaks with oil and cook for 1-2 minutes each side or until meat is browned.
2 slices sourdough bread, char-grilled. Rub the garlic on the bread for flavour.
Spread the bread with your dressing, top with onions and alternating layers of rocket and fennel.
