Making a three egg omelette sounds easy enough but perfecting it proved too big a challenge for Masterchef finalist Callum.

Herb and cheese omelette
Ingredients
- 2 eggs
- 1 tablespoon thickened cream
- 1/2 teaspoon olive oil, or olive oil spray
- Generous handful of grated tasty cheese - about 1/4 cup
- 1/4 cup chopped fresh herbs of your choice
- Salt and white pepper, to taste
Method
1. Preheat a 20 cm heavy-based, non-stick frying pan over medium-high heat.
2. Break the eggs into a bowl, add the cream and beat with a fork. Heat the olive oil in the pan, or spray lightly with oil.
3. Pour the egg mixture into the pan. Allow it to set for a few moments and then, using a spatula, push the mixture from the edge to the centre of the pan. Turn the pan from side to side to make sure the base is covered. Wait a few moments, then repeat.
4. Use the spatula to go around the edge of the omelette and make sure that the edges are tidy.
5. Season with salt and pepper and scatter cheese and herbs across it. Carefully lift one side of the omelette and check for colour - it should be a light golden brown. If it is, fold in half, then slide onto a plate.
6. This whole process should only take 2 minutes.
