Buffalo wings
Prep time: 5 minutes Cooking time: 40 minutes
Serves: 6 as a main meal β or makes a huge platter for a party
Ingredients:
1 tablespoon smoked paprika
1 tablespoon salt
3kg chicken wing pieces β the drumettes and the wingettes, not the tips
1/4 cup olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chilli powder
Method:
Preheat the oven to 200C.
Combine all the dry spices in a large snap lock bag. Place the chicken in the bag and shake to coat evenly. Alternatively, toss together in a large bowl.
Place the chicken wings on two large baking trays and drizzle with oil. Itβs important that they are not overcrowded on the tray, or they will boil in their own juices rather than going golden and crispy. Place in the oven for 40 minutes or until golden brown and cooked through. The time will vary according to the size of the wings. Serve with blue cheese dressing, honey mustard dipping sauce, or ranch dressing.
Honey mustard dipping sauce
Makes 200ml Prep time: 5 mins
Ingredients:
1/2 cup homemade or whole egg mayonnaise
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon finely ground white pepper
1 tablespoon whole grain mustard
3 tablespoons honey
1 tablespoon Dijon mustard
Method:
Place all the ingredients in a small bowl and stir to combine well.
